Tequila Dale's Sausage and Bacon

Tequila Dale's for breakfast!! We always tell our customers that they can use Tequila Dale's W.O.W. (Wing or whatever) Sauce on anything! Try dipping your bacon or breakfast sausage in Tequila Dale's W.O.W. Sauce prior to cooking. It gives it such a rich delicious flavor, and just a little bit of kick!

We love the opportunity to meet new vendors as we travel to different events, and even more exciting is when we get to try their products either alone or with our own! A few weeks ago at the Holly Springs Farmer's Market, our booth was next door to Valley Love Organic. We just had to give their breakfast sausage a try....there is just something amazing about freshly made sausage from pasture raised pork. And of course, what is breakfast sausage without some delicious homemade waffles!

 

Quinoa and Black Bean Salad

Ingredients
1 cup of quinoa (cooked)
2 cans black beans (strained, I use organic no salt added)
1-2 cups of frozen or fresh corn
1 small cucumber, peeled and chopped
1 Tbsp chopped red onion (optional)
Juice from two fresh limes
1/2 cup of Tequila Dale's Fresh & Sassy Salsa
1 avacado cubed

Directions
Mix all ingredients and allow to sit together in refrigerator for at least 3-4 hours. If you plan to serve the next day, consider waiting until just before serving to add the avacado so it doesn't brown.

Great as a side dish or a quick and healthy snack or lunch!

Tequila Dale's BBQ Ribs

We've been doing the Ribfest tour here in NC for the past few years, so we already KNEW that our Tequila Dale's W.O.W. (Wing or whatever) Sauce tastes great on ribs, especially rubbed ribs. So, when we were lucky enough to get a sneak peek (taste) of a rub soon to be released by our friends over at Tay's Sauce, we stopped off for some ribs to enjoy over Memorial Day weekend. We got them ready by covering them with the rub and putting them in the refrigerator overnight. If you can't find Tay's rub, choose a high quality, all natural rub.

 

After sitting for a day in the rub, we slow cooked our ribs in the foil for 3-4 hours using our gas grill set to about 300 degrees. We recommend turning the ribs every 30 minutes so they don't burn. Then, place them directly on the grill (without the foil) for the last 20-30 minutes to give them just a bit of char. Serve with Tequila Dale's W.O.W. (Wing or whatever) Sauce. They were perfect!

Tequila Dale's Shrimp and Grits

What is more satisfying to the soul than Shrimp and Grits? Well, here's an AMAZING Tequila Dale's Shrimp and Grits for you to try!

One of the most important parts of this recipe is making sure to purchase (or catch) GREAT shrimp. We got our shrimp from a local market called LL Urban Market. It's a really cool produce stand, but much much more than that. They carry meats, fresh seafood and local products, such as all of our Tequila Dale's sauces and salsas.

Ingredients

12-16 oz fresh or frozen shrimp (peeled and deveined)
1 cup of uncooked grits
1 1/2 cups of chopped celery
1 cup chopped onion
1/2 lb bacon
2 Tbsp butter or olive oil
2 cups of shredded sharp cheddar cheese
3-4 Tbsp Tequila Dale's W.O.W. Sauce (Wing or whatever Sauce), or to taste
2 Tbsp minced garlic
1/2 cup white wine
2 Tbsp sour cream
1/2 cup cream or milk
salt and pepper to taste

Directions
1. Cook grits according to package directions.
2. In a sautee pan, cook bacon, remove from pan and crumble. Drain grease.
3. Add oil or butter.
4. Add Tequila Dale's W.O.W. Sauce, celery and garlic and cook until softened, about 10 minutes.
5. Add onion and shrimp. Continue to cook 2-3 minutes to soften onion.
6. Add wine. Simmer, stirring frequently, for 5-10 minutes, or until onion is softened.
7. Add crumbled bacon.
8. Add cream and sour cream, stirring for about 5 minutes or until sauce is fully mixed and starts to reduce slightly. Salt and pepper to taste (we didn't add any extra seasonings).
9. Mix cheddar cheese into cooked grits until cheese is melted.
10. Serve shrimp mixture over cheddar grits.
