Spicy Chicken Stroganoff
Ingredients:
6 chicken breasts*
sliced mushrooms
sliced mushrooms
1 TBS extra virgin olive oil
salt & pepper to taste
1 jar Tequila Dale's Fresh & Sassy Salsa (for spicier stroganoff, use Tequila Dale's Sexy, Spicy Salsa)
1/2 cup sour cream
Directions:
Season the chicken breasts with salt & pepper and brown both sides in skillet in the olive oil. Add sliced mushrooms. When browned add the salsa and cover with a lid, reduce heat and simmer for 30-40 minutes. Remove the chicken to a platter. Turn off the heat and add the sour cream. Serve over egg noodles, rice, or couscous, with a salad on the side.
*Note: The chicken could be cut into bite sized pieces, seasoned and then browned, but I like mine left whole. They fell apart they were so tender!
