Here at home we are always looking for new family friendly recipes to try that everyone will eat. With a preschooler and a teen, some allergies and one special diet, sometimes that's a tough challenge. But, here's one that everyone loved.
Ingredients
2 pounds russet or red potatoes, peeled and cubed
2 Tbsp sour cream
1 large egg
1/2 cup milk or cream
2 lbs ground beef
1 carrot, peeled and chopped
1 med onion, chopped
1 cup beef broth
3-6 Tbsp Tequila Dale's WOW (Wing or Whatever) Sauce
1/2 cup frozen peas
2 Tbsp butter or margerine
2 Tbsp flour
olive oil
salt and pepper to taste
Directions
1. Boil potatoes in water until tender. Drain and place in bowl with sour cream, egg and cream. Mash until potatoes are fairly smooth.
2. While potatoes are boiling, heat a large skillet and add a bit of oil. Brown meat, seasoning with salt and pepper to taste. Add chopped carrot and onion and cook until veggies are soft, stirring frequently. In a small skillet melt butter over medium heat. Add flour and whisk together. Add beef broth and Tequila Dale's WOW Sauce. Stir until thickened and smooth (about 1 minute). Add sauce to meat and vegetables. Add peas and stir well.
3. Preheat your over broiler. Fill small casserole dish with meat and vegetables. Top evenly with potatoes. Broil until potatoes start to brown. Then cool slightly and serve.
**Steamed cauliflower can be substituted for boiled potatoes for a healthier, lower carb option.
