Cauliflower is the new hot veggie, or so we hear. People are using it in place of potatoes, meats and even pizza crust! And why not? It's super healthy! We've been trying to sneak vegetables into our kids' diets. So, we created this delicious, creamy tasting soup, using a traditional cauliflower soup recipe and kicked it up a notch by adding our Tequila Dale's W.O.W. Sauce.
- 4 Tbsp of butter or olive oil
- 1 small white onion, chopped
- 1 small shallot, chopped
- 1 clove garlic, minced
- 1/2 tsp salt
- 1 head of cauliflower, washed and cut into smaller pieces
- 1 turnip, peeled and cubed
- 1 tsp thyme
- 1 bay leaf
- 1/4 cup of Tequila Dale's W.O.W. Sauce (or to taste)
- 6 cups of chicken stock or broth
- fresh black pepper
- a dash of nutmeg
Directions
Heat soup pot and add oil or butter. Add onion and shallots and sautee until soft or about five minutes. Add garlic and sautee another 1-2 minutes. Add all other ingredients except pepper and nutmeg and simmer for 20-30 minutes. Remove bay leaf and pour remaining ingredients into a blender (work in small batches if necessary). Blend until completely smooth. Add additional stock, if needed to thin. Serve with pepper and nutmeg on top to taste.
